April 7th – Coconut Bread Pudding

1 Cup of Coconut

1 1/2 Pints of Milk

2 Cups of Bread Crumbs

3 Eggs

Soak coconut in milk for about 2 hours, add the bread crumbs. Beat the eggs and add to the milk. Pour into a greased pudding dish and bake for 3/4 hour in a moderate oven.

Serve with a sauce of your choice.
